Not your grandmother’s Super Bowl: Buckner Senior Living communities serve up flavorful favorites for the big game
Stereotypical nursing homes can be known for bland entrees, stale crackers and routine menus.
But Buckner Senior Living communities are more than a traditional retirement home.
Here, we take every opportunity to spice up life, and Super Bowl Sunday is no exception.
Derone Martin, chef at Parkway Place, shares his signature recipes for barbecue sauce and chicken salad below. These spice-filled favorites will be featured at the Houston senior living community’s Super Bowl Party alongside sweet and sour meatballs, nachos and mini hot dogs.
And like all good food, these classic recipes are best enjoyed in the company of friends.
BBQ Sauce
Prep Time: 15 minutes
Ingredients
- 18 oz. Sweet Baby Ray BBQ sauce (or another BBQ sauce base)
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground black pepper, or to taste
Directions
- In a medium bowl, stir together the barbeque sauce, chili powder, garlic powder, onion salt, oregano, and ground black pepper.
- Cover, and keep refrigerated until ready to use.
Chicken Salad
Prep Time: 15 min Ready In: 1 h 15 m
Servings: 6
Ingredients
- 2 cooked skinless, boneless chicken breast halves, cut into cubes
- 3 stalks celery, finely diced
- 1/2 cup mayonnaise
- 2 tablespoons minced yellow onion
- 1 1/2 tablespoons sweet pickle relish
- 2 teaspoons prepared mustard
- 1 1/2 teaspoons ground black pepper
- 1 1/2 teaspoons minced fresh dill
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
Directions
- Stir chicken, celery, mayonnaise, yellow onion, relish, mustard, pepper, dill, salt, and garlic powder in a bowl until well combined.
- Refrigerate at least 1 hour before serving.
